Default o2 clamp question

I personally won't be needing one buuutttt

you can get pressure switches on ebay that will either break a circuit or close a circuit at a certain PSI.

Couldnt you just break the o2 sensor output at x psi? Would 15 seconds or so without a signal be enough to trip a CEL?

You wouldn't want to necessarily cut the signal. You want to feed the ECU a voltage that correlates to a leaner-than-stoich condition, IE .35V. The ECU counters the "spoofed" voltage value by adding fuel.

If you dig around, there is a schematic floating around. It wouldn't be a complex device to build if you've touched a soldering iron before.

FWIW, the FIC will allow you to feed the ECU any O2 voltage you want. At the moment it's limited to 2D, voltage & RPM. The next software release should have it referenced against pressure as well.
