Use this vinyl stuff from Parts Express. It's not difficult to remove once the car has a new purpose. It's lightweight and has a pleasant new-car-smell once installed.

Do what Vlad posted. The bulk of road noise comes from the back. The biggest gains in order are (in my opinion) 1) rear package tray, 2) rear bulkhead behind seats, 3) trunk floor, and 4) the floorpan under the carpet.
