With a 63k motor, you should not need to do anything to the head. I wouldn't touch it besides resurfaced gasket area.

If your shop want to bore the cylinders and then order pistons, you need to find a different shop. Seriously, that's completely backwards. The bore needs to follow very specific measurements provided with each piston kit.

If the shop wants to bore the cylinders without looking at them you need a different shop. Likely you just need a hone and stock-sized pistons at that kind of mileage. Won't know til it's apart.
