Because I ride MTB, and i really like the idea of a cross bike with MTB bars and a slacker head angle. I've never really ridden a road bike, nor have i ever liked those hoop bars. My idea of riding a road bike includes dirt road riding, bunnyhopping up/off curbs, ripping turns, manuals, wheelies, and still being able to ride longer distances on the road and in to town.
I live in a VERY rural place, with very limited roads to ride. Lots of sandwashed roads, huge potholes, dirt roads, little to no shoulders for riding, so tons of sidewalk/dirt riding. Thus the CX requirement.

If you have a lot of weight on your hands when using drop bars, your saddle is in the wrong place or your bike is the wrong size. When your bike is properly sized/fitted, you should be able to let go of the bars and easily hold your upper body at the same angle using a minimal amount of effort.
Drop bars are better for your wrists for the same reason that vertical grips are more comfortable/natural on semi-auto rifles. If you let your hands hang in front of you, they naturally gravitate toward the hand/wrist position that you use when you're riding on the hoods of a standard set of road bars.
Ergonomic keyboards follow the same principle.

Like Andrew said, despite the odd shape, it is more comfortable. If the only drop bars you have tried were old school non STI, non-ergo bends, yes, they have limited positions. Go into a bike shop and sit on a $2000 road bike in your size. Ride it around the parking lot with your hands on the tops like a flat bar, on the hoods and also in the drops. Try accelerating hard while in the drops. Yes son, that is how you lay down the wattage on a bicycle.

I should note that I had one small crash last night and now the BB makes awful noises, lol. My HR strap fell off as well so I didn't know how hard I was going and pretty sure I blew-up, but suffered through. This morning I realize why CX-season is only two-months long.

So, I'm about to go tubeless on the CX bike, give me your adviceses:
WTB i19 rim, Stan's 25mm tape in the form of two layers, stans latex, Clement MXP.
Last night we got a pretty good seal on my buddy's tubeless rim without adding latex, seemed to hold shape well at 30psi or so and I plan to run them at 50-60psi. I realize that's a lot of pressure, but I want to keep this bitch on the bead more than I want a soft ride. Finishing the race is paramount to comfort and grip.
