In the link installation instructions it says to take the bullet connector off the power steering pump for the iat sensor. will this affect power steering functionality any or am I supposed to splice in?

While I'm not intimately familiar with the Link in detail, I can say that this will not affect your steering.

The electrical connection at the power steering pump is a pressure-sensitive switch. In the stock configuration, this switch closes whenever the steering pump is under load (eg: when you are turning the wheel against resistance.) This sends a signal to the ECU which raises the idle valve's duty cycle slightly, this pre-compensating for the mechanical load of the pump on the engine. This effect is fairly slight, however- no aftermarket ECU which I am aware of uses this signal, and it is not generally problematic.

I assume that with the Link, they are re-using the line, which conveniently runs to the ECU already, to host a new sensor.
