was looking around my garage for a male/female part for a quick release to make a gauge harness and i happened upon a cat 6 cable and thought to my self i wander if a 6cat cable would work. not sure if the wires are to thin but was going to cut the tips off and use it as my wiring.

CAT6 is quality wiring, and shielded twisted pairs. should suit what you're looking for fine (except knock sensor, iirc that uses coaxial for a reason.)

i just need power, ground, and single for water/oil type gauges

Don't do it. I used Cat 5 to wire up some interior light LED's and the insulation melted off in multiple places causing intermittent shorts, and the wire got so hot that it melted the insulation off of other wires which I had them zip tied to.
