Miata cooling questions

I've recently been experiencing overheating issues and was wondering what you all are doing in terms of cooling setups. I'm running an eBay turbo setup, which is intercooled, but consistently have engine coolant temps upwards of 210°F. This is suboptimal. The thermostat I'm running is a 95-degree one, so that may have something to do with it. Maybe this is a heat-soaking issue? I have good exhaust shielding in the engine bay and even rerouted the windshield sprayers to spray on the intercooler, but I don't think that does much of anything. The car runs 11.3-12.00 AFR in boost, is this too lean? Usually around 15.5 cruising at 45 and 14.7 on the highway. Would running this lean cause that much excessive heat?

If anyone could send pictures of their setup or offer advice, that would be very appreciated.

The intercooler has nothing to do with coolant temps. What is you coolant setup? 210 is not critically hot.

Do you have the undertray on?

Setup is a 1 year old OEM rad, both fans (they turn on at 195 degrees), no reroute. No undertray but I did make nice air ducts for the intercooler-radiator area

Put an undertray on it. It is a necessary part of the cooling system.
