Default Temp sender location

I just installed a FM11/Hydra kit on a 99 dedicated track car. I want to install a coolant temp gauge. Have a inline adaptor that goes in the upper hose. Was wondering if decreasing the inside dia. well pose any issues. As I understand it the ECT sensor on the back of the motor also controls the fans on the later cars so removing that is not an option. Where are most installing the sender on the later cars? There is a plug on the back of the head which you can remove and replace with a sensor. I'll look for the pics of this later, I made that thread about 5-years ago.
