Default 1.8 back head temp sensor Q's

Doing another no frills off road reroute, and that sensor on the back of the 1.8 (97) head has that stupid crush washer seal on it. Is there any other NPT temp sensor on the market that can be used with the same resistance curve as the Mazda one. I'm thinking of using one of these inline temp sensor mounts (picture) and a thermostat in back of the head with a few extra holes in it. Car is running MSI and will be off road only, no heater core.

I'm sure this info is here somewhere but dam if I can find it.
