So Ive recently bought a few things on eBay, and when I go to check out I get the option to choose which type of shipping I want, the last few times its been giving me this sort of thing.

Lots of sellers are complaining about the new shipping details thing eBay is doing. When listing an item now you have to be careful and give yourself a pillow for shipping. I usually say 3 days handling time, but 9 times out of 10 I ship the same day. eBay takes the handling time and the estimated transit time for the service they choose to give the buyer an estimated delivery date. They've been bitching on the forums about it since they started doing it. I've never had a problem with a buyer complaining about shipping times, but it seems that lots of these guys are getting bad feedbacks on a regular basis since it started.
