It's not so much that you have the AC disconnected that you have both fans running all the time. If you don't overheat like that then you need to start doing things to increase the cooling capacity slightly. Actually the simplest thing is just to run both fans full time at the track, if it's a track only issue. It's how I run my 91 and 92 track cars all the time.

You have lowered your coolant ratio, right??

Both fans run together, but, apart from grounding the thermo switch, I haven't found a good way to run fans ALL the time
