Default Slow spool after Toyota COPs fell off

Welp, I'm pretty disappointed. A few weeks ago I installed some of them Toyota COPs onto my Mitsubishi 14b Miata, and while I was driving on the freeway the bolts fell off, and the COPs rattled off, and car acted super funky and then died. I pushed them back on, and car drove fine. After that, the car burnt about a cup of oil per day, and spooled like donkey. The car feels torquey with uphill light throttle, it just feels like when the boost should be hitting nothing happens. The logs also show an additional ~500 rpm loss in spool, with the boost stopping right around 170 kPa instead of my target of 185. I assumed I had a bad turbo, and replaced my 14b with a new one that I rebuilt. The bad turbo had a massively cracked exhaust wastegate housing, so I hoped my problem was fixed. Unfortunately, the slow spool is still an issue. I'm wondering if I melted my cat with all of that unburnt fuel from the spark cut? I haven't driven the car much since I've replaced the turbo, so I don't know if it is still burning oil.
Any ideas of what to check next?
DIY MS2 w/ Seq injection, COPs, 14b, FM dual exhaust, stock cat, I think it has an older Begi td05h DP and manifold.

Did you replace the spark plugs afterwards?

or at the very least, take them out and check they're not fouled?

Did you check the cat to see if it's blocked?

If your injectors were still firing without any spark, you could have some banana rods from hydrolock. Do a compression test when you pull the spark plugs.

Alright, turns out I have a resonated test pipe instead of catalytic converter so that is out of the way. I bought this car back in December and converted it from bandaids to Megasquirt, so I'm about 90% familiar with everything on it. I did get some spark blowout last night after driving it around, so I will take a look at the spark plugs and do a compression test next. If that ain't it, I'll replace the COPs like cpierr03 suggests.

Okay, so I discovered than no matter what boost I was at, my gauge never went above 8 psi. I clamped off the vacuum line that goes to it, as well as redid the connections on the wastegate since I noticed a very small amount of play in the flapper. I did a compression test and cleaned off all of the spark plugs, and the numbers were the same as when I bought the car, 185-170-170-170 (+- 2 psi). The car seems to be spooling better now, but there is some random spark blowout so I will drive up to a picknpull and grab some new COPs. I might also try and put on the 10000 uF Capacitor that Braineack recommended.
Also, while I was working on the car I had a box of washers fall down into the drain area on the driver side fender from the cowl, any ideas to pull them out?

You could undo the bottom 2 or 3 bolts of the fender to and gently pull the fender away from the chassis to fish out the washers.
