When to revalve Shocks

When to revalve Shocks
So I have a set of used Bilsteins I picked up locally for $100. They had just over 100k miles on them when removed. I was originally going to revalve them for autocross (ES), but the money for the revalve keeps being spent on other things and they have been sitting in my garage over a year now.
The local "go-to" Bilstein rebuilder, Kenny Hendricks, is no longer in business. The new owner of his shop works for Bilstein. I feel like my stock shocks are done. The rears bottom out easily. Should I just swap out the stock Showas for the Bilsteins and be done? What am I missing out on by not having them revalved?
