Default fan temperatures in hot weather

I have a query, I am retuning my Miata 02 VVT car with Adapttronic, I am in a Hot Climate (Miami) do you know what the OEM temperature is at which the water fan turns on and off and what would be the ideal temperature for a car that drives alone in this kind of weather i own an aluminum mishimoto radiator, water rerouting and original thermostat.

"original thermostat" is 92c, or 197f. Fans are typically programmed to turn on when the thermostat opens, so on at 197, off at maybe 192. They won't control your car's temperature though. If you turn them on at 180, the temps will still climb to 197. So if you want to lower the overall temperature of your coolant, do it with a 190 or 180f thermostat. I wouldn't personally run a 180 thermostat, but I don't live in Miami, maybe you need it.

If you're consistently running hot (over the thermostat temperature), then there's a coolant system problem. Either not enough flow, blockage, or ducting issue.
