Default Warmer weather temp issues

Since I finished my turbo setup in the fall of last year my car is now seeing warmer weather for the first time and I'm wondering if I should be concerned with the coolant and oil temps. My car is daily driven 70 miles a day mostly highway.
Coolant temps seem reasonable peaking at 205-207f but only while the car is moving. When I am stuck in traffic temps slowly start rising and I have seen up to 219f. This tells me my fans arent keeping up but not sure if it's worth it to upgrade and what to upgrade to. Dual 12in spals? Shroud or no?
Cooling setup is Supermiata crossflow rad, coolant reroute, 195f thermostat, ducted front mouth, both stock fans wired in parallel, OEM plastic undertray, upper radiator cooling panel, no A/C

Also my oil temps have always been a concern even when the car was stock. Measured at the oil filter sandwich plate they peak at 250-260f during track days or long highway runs. Now that it's boosted they reach that number daily during my highway commute if the ambient temp is over 60f. Should I run an oil cooler?

It's been about 80f here but in summer we regularly see 100f.
