If you have the money, and don't want to spend a ton of time tuning, then I would go with an AEM. Arther at Trackmasters is good and he likes AEM. $300-$350 will get you a full tune from him. It's not a steady state dyno, but he has enough experience with AEM that it probably won't matter. Tunerstudio is soooooo good with autotuning, MS that you don't really need a steady state dyno.
If you are on a budget, then you can't go wrong with the megasquirt. You can buy a diypnp and Brain can build it for you. I built my own and it was not difficult, but it does take some time. You have to have a solid game plan when building so that you know what outputs you need to connect and how to connect them.
I would get the EMS first, tune it, then start adding pieces and retuning. You need a wideband if you don't already have one.

I like the idea of the AEM. I will look into that one some more. One question I have is that say I get the AEM EMS, have it built & put in. Run the crap out of it and then add some more goodies. Do I have to send the AEM back and have it re-tunned or does this learn?

I don't know if the AEM has an autotune for fuel. I think only the adaptronic has an auto tuning spark table, but I could be wrong. These ECUs are mostly user defined. You plug in values to the fuel and spark tables determined by the data that is collected from a dyno, datalogging, etc.
Search in the AEM EMS section to learn more about it, or give arthur a call at trackmasters in Huntsville. This site has a wealth of info on MS. DIYautotune.com has a stock base map that is a good jumping point.
300HP is expensive. Good luck. IF I did it over again I would probably shoot for 250 with stock internals.

Good point about the cost of the 300hp. Once I get a handle on everything needed to get to that point, my plan may change. I am currently in the planning stages, as you can tell.
