What type of grease do you recommend for assembly, and if different, for future zerking?
What grease works best with the bronze bushings? Thinking something like AMSOIL Synthetic Polymeric Off-Road Grease, NLGI #2?

It really doesn't matter much, since the primary role of the grease it to keep dirt and water out and not so much to lubricate. I wouldn't use anything expensive or exotic, just plain wheel bearing grease, or marine grease... or whatever is laying around in a grease gun. If you live/drive in wet, rainy, or snowy/salty areas, I recommend "water proof" or marine grease. The only thing to note is to make sure you don't mix silicone and hydrocarbon based greases, pick one and stick with it.

Good stuff right here. Put me on the list for the $610 delrin package.
