But every reference I'm finding suggests that the tradition of putting marshmallows onto sweet potatoes originated the American south in the early 20th century.

It's amazing how far afield these threads sometimes ramble, but since we're here, may as well throw my $.02 in-
Sweet potatoes rule. Baked please, with a little butter and salt. No marshmallows for me; they're nasty.
Speaking of "baked", I remember the first time I got fries in Amsterdam and was served mayo as an accompaniment; it was at a little kiosk place just off Newmarket Square at the edge of the Red Light... Absolutely the best fries I've ever eaten, although given that we had just left Basjoe (A'dams best coffeeshop in my opinion) I suppose wet cardboard would have likely tasted just as yummy.
Another great French fry condiment is Malt Vinegar, which seems to be a New England thing. De-lish!!

1. You mean "England" or "Old England" because that stinky combination comes from across the pond.
2. Discovered by the Germans in 1904, they named it San Diego, which of course in German means a whale's vagina.

The one thing I found annoying over seas was getting charged per ketchup packet. It wasn't the price, but that I kept forgetting to ask for it and driving away. Then realizing to late I forgot to ask and left empty handed.
One thing I love on burgers and everything is this. They had it for burgers and similar stuff while I was in England.
Not spicy really, but damn delicious. Seriously try it.
Also according to the chef wife the center of the eggplant is what makes it mushy, and to cook the eggplant last because it is really easy to over cook.

If you look closely, you will increasingly note that mayo is being made available in the pump-style condiment dispensers at the fast-food courts in US airports which service large amounts of international traffic. JFK's terminal 5, for instance, has it at the big central food court. They also have a Philly cheesesteak place which serves sweet potato fries and sea-salt.
It's one reason I prefer to fly JetBlue out of JFK (the only airline which services Terminal 5).
I use a lot of Sriracha, and I like Frank's original Red Hot sauce... Perhaps I shall give this one a try.

3. Sriracha sauce rules all.
4. All tuna tastes good, but in different ways. Cheap canned tuna tastes okay, but is bad for you and I won't eat it. Premium canned tuna tastes like really, really good canned tuna and is great with some mayonnaise and dill relish, or mayonnaise and sliced green olives, or mayonnaise and capers. Tuna steaks, preferably sushi quality so that you can just sear the outside and leave the inside creamy and cool is incredible. Or just eat it raw.
5. Malt vinegar on fish and chips is natural and right.
6. If you haven't made real homemade mayonnaise with bacon grease (baconnaise), you're missing out. Basil pesto mayonnaise is also noteworthy.
7. My wife just read over my shoulder and agrees with whoever (Joe?) said that eggplant is gross.
8. How has this thread gone 4 pages and no one has mentioned sardines? Recently, I've been addicted to sardines on crackers topped with sriracha sauce. Don't get nasty sardines (and especially don't get sardines in tomato or mustard sauce). Look for nice quality sardines in olive oil. I don't eat gluten so I usually use Nut Thin crackers. Then top it off with a generous dollop of sriracha. Heavenly.

The love affair with Sriracha is something I will never understand. Yes, it is good on some dishes, but this internet hipster, I put sriracha on everything and my life would cease to exist without it. Is annoying. It really isn't good. On its own, it has very little flavor. I have been eating it since I could walk practically and don't understand the obsession. I enjoy it on Asian dishes and use it just to add a little spice. Its like ever since oatmeal did the comics, it is the new thing to like and if you don't keep a bottle in your purse you are a a secondary member of society.
