GF and I got two bags of that when we bought our 1/4 cow. Looking forward to making some amazing beef stock. Whats your plan? Just the marrow?

meat butter. You know it as bone marrow. Everywhere we order jacks it up with sauces and bs. I plan to do them in the over at 350 until the bubble seasoned only with kosher salt before cooking and zested with lemon before eating. I might also eat this with my next batch of pork belly, this time with a brine to take seasoning better, with a mustard my GF made, on brioche from the local, baller bakery. I'm starting to get good at cooking the ---- that scares most people.

Chicken-fried sweet breads are next.
