I was a junkie of 80s hairbands and the best guitar solo I've seen was from Akira Takasaki of the Japanese band Loudness. Compilation below. He was fast before most of the speed guys were fast.
That dude had to have gotten a lot of play in the day.
Hell, I'd almost let him strum on my virgin hole after watching that

Killswitch cover of an oldie by Dio, with a little bit of a video tribute to the original. I like the harder version better. (just had some weird dejavu too).
About 2:08, short, simple, not overly technical
And of course Sanitarium...

If you are talking about not overly technical solos, you MUST listen to this solo also at 2:08. You've probably heard the song a million times (well, if you were from my generation you would have) but never really thought about what he was doing on the solo.
