I want one badly. At my last track day a C7 Z51 and C5 Z06 were the two fastest cars out there. The Z06 was even running the new EC Sports and he really liked them. Basically all a C5 Z06 needs is brakes, oil/water cooling, and seats/harnesses. Tires obviously will cost a lot, but you have to pay for speed.
The 350/370 Z's weigh more than a C5 Z06, make less power, get worse mileage, and are more expensive. The C5 Z06 is the king of budget speed deals right now. Horrible GM interior, though. You can make one a bombproof DD/light track weapon pretty cheaply, though. Trackhq.com has great thread breaking down how little needs to be done to them.
350Z's are not more expensive than a C5 Z06. A C5 Z06 that isn't trashed or 100K+ miles is still going to be ~$18-22k.
Z06 = hardcore sports car
Z cars have been GT cars since the 280ZX.
GF is looking at getting a 2016 mazda 3 or a 2012 camry SE. Any preferences?
She had an elantra in the past. Trim levels are similar. I'm going to be driving it a bit if we go on trips etc. This is a 'keep it till it breaks' kind of car for her.
Would also lean towards camry as I have a friend with a 2012 Camry and my dad with a 2013 Mazda3, Camry has ~80k and has less rattles/creaks/dash not lifting up off the radio like my dad's ~50k miles mazda3.
Ex-wife had a 2010 Mazda 3 than at the end of 2014 bought a 2015 Mazda 6 Grand Touring w/Tech Package (this is a damn fine vehicle buy much more expensive).
My preference is always for new over used so I can ensure it's over-maintained like I do with my vehicles. And it puts more money in Mazda's pocket for things like the Miata and a possible RX return.
I haven't driven either, but I have a feeling that the mazda may be more fun to drive, but the Camry will have better longevity and potentially hold it's value better given how little she's going to drive now that she's in school again.

Thanks for any input!

Sounds like the camry has hardly been driven
Definitely give them both a drive, I'd hope for the camry to have paperwork of maintenance or a good carfax.
Well, the price range went from 6k to 12-14k, so I honestly think she should get an impreza with similar mileage. Those cars are both in the 13k ish range. Im staying out of this unless I'm asked a question though lol.
370Z Nismos are more than the C5Z but newer too. 350Z Nismos are similar in price and age (still a bit newer), but not nearly the same level of car.
Z's are shitty GT cars IMO, especially the 370Z. One of the loudest cars I've ever ridden in (road noise).
You should have ridden in my BRZ with solid mount Ground Controls and 255/35/18 Star Specs.
You could barely hold a conversation with a person in the passenger seat without speaking noticeable louder. Talking on the phone was basically impossible.

Well, yes, that's a BRZ with solid mount ground controls and sticky tires. I'm talking about a bone stock, low mileage 370Z.
