Mostly to take advantage of the MS's in-built 10-bit ADC tables for the GM temperature sensors.

The MCP3008 uses 10-bit ADC, like the MS, vs the ADS1015 which uses 12-Bit ADC.

For GM temperature sensors, I'd need to scale the 12-bit ADS1015 values down to 10bits (ie. divide by 4 in S/W) before passing them onto the MS to take advantage of the in-built tables rather than defining my own tables.

For other user-defined sensors, 12-bit ADC would give more resolution though but I figured that since the MS3 designers decided that 10-bit ADC was good enough, I may as well too.

Here's another option. Banks Power iDash 1.8. I've been testing one on my megasquirt miata for a while now.
It will officially support megasquirt and AEM, Link, Motec, Haltech and more very soon.
It can read up to 5 values per gauge, custom low high alerts, shift light, min/,max log, and 10Hz datalogging.
You can chain up to 4 of them and it will Support 4 ch analog input/thermocouple modules, water meth and more soon.

The PT Gauge is really nice but it's ******* huge. I'm having a difficult time deciding where to put in.

And another option:

52mm Display - CANchecked - Displays für Motormanagements

They also do a 2.8" OLED display which looks pretty neat - you can design your own layouts etc

2.8" Display - CANchecked - Displays für Motormanagements

Looking at their facebook page, the square display can also send CAN commands back to the ECU - in Link they have it setup to do things like switch tables, enable launch control etc. Doesn't look like they've done similar with MS yet tho...

Not sure if there are any US based dealers tho..

Temperature trim-pot pull-ups replaced with 2,490ohm resistors.
The Accelerometer daughterboard is a 3.3V board so can use the Teensy's analog inputs correctly for the X,Y and Z inputs.

This is super slick man, I really like your implementation. Are you doing this open-source/eagle or planning on selling expansion boards? Would definitely love to get my hands on one.

Also are you running your wideband through CAN as well as this on your nb?
