MS1 Tuning help needed!

Hello everyone!
I am in the process of tuning my 1991 1.6 with MSPNP 1, car has turbo installed. Runs well but i am having problems with the MAT correction. I initially started off with the 90-93 base map without afm, reconfigured it to suit my set up (RX7 460cc injectors). I forgot to copy/paste the ini files at first and made adjustments/tuned my fuel table. The ini files are now where they need to be, and i have also changed in the firmware so that the coolant corrected air density goes by Mat and displays matgauge. With the Gammae gauge open, just recently it was at 125-130%. So adding 25-30% of fuel to maintain my AFR's. From reading and what i have understood, should the gauge be at 100% always? This has messed up my tune, always goes lean in colder weather.
Looking for some advice as to what i should do next.

GammaE is basically the sum of all correction factors. Don't aim for an arbitrary "best" value of 100%; get it to what it needs to be to hit your air/fuel ratio.
