Your experience with muscle cars was with 50-60 series sidewalls. With 40 series it'll have the tire severely pinched. Do 9's for a street car or 10's if handling is a factor.
With that said a VR1 in a 245 might start to hook that power level in 3rd gear or at 80+ mph. Honestly you need a stickier tire and I wouldn't dream of a 225.

Thread bump, just read through this entire thing and didn’t see an answer to my question.
What’s the best size recommendation for 15x8 on the street with a V8 (300-400hp) in an Exocet chassis? I planned on 245/40 but it seems like everyone here goes with 9 or 10 wide, I’m from the muscle car world where 245 and 8’s go well together. Is it worth sizing down to a 225/45 or would the power level dictate staying 245/40?
