You definitely need an AMG Merc
Used S65-Twin turbo V12 lots of gadgets to break. starts with 600hp then get some Rennspeed, Kleeman etc bits. Not great from a start as it is pretty heavy.
Or cheaper E55 and get all the go fast bits for the engine. again it won't win any road races but it will be comfortable and fast.
Oh and if you own it, it will definitely never run.

My recommendation - don't spend that kind of cash on a car. Lower your budget, buy something plenty fun for $20-25k, bank the rest.
You need something like my IS300: LS3 IS300. I had this car out at Atlanta Motorsports Park yesterday - my best time was less than a second off of my Miata from the day before, and that's in a comfortable street car with full interior, AC, a huge 6 channel amp, etc. Probably would have been faster than the Miata but the track made me cork up the exhaust to quiet the car down since it was > 98db @ 50 feet.

I like most of this car. The interior is dope: http://www.norotors.com/index.php?topic=8948.0
I'm planning to be buried in the Supra. I've had it for 13 years. All these other cars are just mistresses; that's my wife.

It would be hard to find a finished car - there are far fewer of LSX swapped ISs than there are RX7s. However, if you decide you want to build one this guy has already tackled a lot of the hard stuff:
