I don't know what rides you're looking at. Our normal ~45 mile loop has about 2500'. There were only two real "climbs" by Texas standards, which are pretty lame until you get to the proper hill country.

Was thinking of Trey and his disposable bike habits while watching the premiere of the new season of Top Gear.
Hammond was riding some spendy thing with electric derailleurs and crashed and sheared the rear D off in the first few miles.
