I don't really keep track, I consider everything related to the car to be a wear item with different wear cycles. To that end I've probably replaced everything on the car aside from the shell at least once.
I see it as a dynamic creation that will always need some maintenance, doing it right should be done every time, but doesn't mean it no longer has a wear cycle.
I wouldn't think of a boxster or s2000 any different. Just that the parts would be more expensive.

I forgot about wheels and radiator.
I first got a 2" thick SR radiator (the RX7 guys in the bay area), before Koyo came out with their 2" NB radiator. It lasted about 3 years then cracked, because it used epoxy. I now use a CSF radiator.
Wheels - stock, then Rota, then Comp SSR's, then added 6UL track wheels.
Tires only last me 8k miles.
Front speakers - tore out Bose crap within weeks of buying the car and installed some Audaxes. I recently replaced those bec of water damage. I also recently upgraded the audio processor I had.

Jason, does the Alpine processor handle digital input/output? I use a custom non-oversampling DAC, connected to my in-car PC through a coax cable, and while I would like to do the time alignment and EQ through a dedicated box rather than a plugin in Winamp, I don't want to convert from analog to digital and then back to analog.

X2 Timing belt on old 1.6, within 6 months. ******* keyway
94 block/99 head swapped in. Havn't touched it yet.
Stock suspension > FM 2.5 kit > FCM with FM springs > FCM with 450/300 > multiple ride height adjustments/alignments, way more ******* often then necessary.
5 speed > another 5 speed > 6 speed. I've got another 6 speed laying around in case this ******* grinding doesn't go away.
Stock 4.3 "LSD" for 4.1 Torsen. Ugh, for some reason this swap annoyed me the most.
I have a turbo kit in the works and hopefully I won't have to take that **** apart 53 million times.

The first car I built (not a miata) I had the engine apart and back together 4 times due to; burnt valves and a melted piston, piston slap (skirt collapse), rod bearing and piston slap (skirt collapse).
The miata has had several swaps of ecu and a lower rad hose repair but so far those were the only do overs. I am however regretting not changing the clutch when I put the 6sp in but it was like new and it's holding surprisingly well.

brakes started out as a secretly made replica of the panache wilwood four wheel kit
then became the good-win version 3 kit
i made my own exhaust and then re-made it a while later with a bigger muffler
I've had the roll bar in and out a couple times
like jason, I love to install engine management:
