So it upshifted on me coming out of a corner.

Needs a MegaShift and a steering wheel with buttons or paddles. No, I'm not kidding.

Nice ride....them autos get a bad rap, but their engines are better for turbo upgrades. One of my Miatas is a slushbox, but it still handles like a Miata. They hold a gear if you turn your over drive/hold button off/on. They won't let you downshift into first at speeds over 20mph. As far as a swap goes, I saw this detailed write up of a ('92 OBD1) sunburst getting swapped from auto to manual, thought it might be helpful:
