welcome to the club!
here are few notes - get ebay 7" touch screen for $100 bux. it fits perfectly in miatas dash. this pop-up lcd is nice but motors go out CONSTANTLY and you will effectively block your heater controls with it, besides it might be too far inside dash so it might not even have enough space to retract

I just bought this bundle used:

And I plan on buying a 7" touchscreen VGA monitor.
@urbansoot - Have you got pics of your install? I would be really interested to see, how you installed it all.

they became more $$. still good deal and monitor is pretty decent too! by the way, dont even bother looking at it during the day with top down - wont see **** unless you get this

See if I wanted to do an In car Computer, I would want it to act more like an Ipod Touch or something similar to that. I would love to have texting (maybe with a Verizon or ATT wireless network hookup) and maybe an internet access or torrent or something of that nature but I think that having 'apps' or 'widgets' instead of a Windows operating system would be kick ***. That is something that I would love to work on in the future for myself, maybe even something that could be produced for other car enthusiasts as well.
