Seem to have things mostly under control. It dropped in to the 70s (untuned area for me) and started a little rough a few days ago, but still waaaay better than when I first started this mess. But here is my progress.
Today after work, probably low 80s ECT, 85* or so ambient temp:

Both were pretty good. Just gotta keep tuning as the temps start to get cooler over night. One odd thing I notice, it likes to have a higher crank RPM setting than average. It allows a little more time before timing advance kicks in, ASE and WUE kick in, etc. I know it's not the norm, but it works for me.
I also have been experimenting with cruise AFR's, and have gotten to about 18:1 AFR while doing 65-80 mph, 60-80 kpa. I averaged 27 mpg on a legitimate daily drive to and from work, under normal conditions. Stock I was anywhere from 21-23, so that's good...
Anyway, gaining more confidence with this, I've been keeping my eyes open for a dedicated tuning laptop, injectors, turbo kit, etc... This MS has opened a can of worms.
No logs today, but here is my tune if anyone is interested.
